One of the fundamental elements of our farm is that all our cattle are 100% grass fed which means that we need to conserve as much silage and hay as we can in the summer to see us through the winter. We mow mid to late afternoon when the sugars in the grass are at their highest and sweetest. All that amazingly fragrant sun drenched goodness is then effectively 'bottled' (compressed and covered, to exclude the oxygen). The result is a highly nutritious pickled forage.
